Punjabi Chole Masala

This recipe is originally from Punjab and also is very famous in north side of India. It has bit tangy and spicy flavour which satisfies your taste buds .

Ready in 40 minutes

Ingredients:-

  • For chole: 1 cup kabuli chana(white chick peas ), soaked overnight and drained.
  • 2 tsp Oil
  • 1/2 tsp jeera
  • 1 onion and 2 tomatoes (for paste)
  • 5/6 cloves of garlic
  • 3 tsp andrak (ginger)[Can use ginger garlic paste instead of chopped pieces]
  • For Making Chole Masala (Dry ingredients) 1 tbsp Anardana powder,2 elaichi,1 Jaivitri (mace) ,Jeera 2tsp,coriander seeds 1 tsp,1 tsp Chana dal,pinch of hing, dried mint powder and saunf [Grind all these dry ingredients in the mixer for chole masala ]
  • Kashmiri red Chilli powder,Corainder powder,black pepper powder and salt as per taste .

PREPARATION:-

1 . Soak the chickpeas overnight in enough water to cover them.Drain the water in which you had soaked the chickpeas. 2. In a pressure cooker add the soaked and drained chickpeas, around 5 cups water. 3. Pressure cook at medium flame till you get 4/5 whistles.

4. Take a pan and heat 2 tsp oil, Drop in whole ginger garlic can also add ginger garlic paste. Add tomatoes and onion(both not finely chopped just pieces) and sauté it for 2 minutes. 5. Add in water not too much and Boil it for 5 to 7 minutes till tomatoes and onions cook well . After cooling make a paste out of it .

Final Step and easiest of all 6.Heat 3 tbsp oil add jeera,red chilli powder,coriander powder,black pepper powder and salt as per taste . 7. Add our tomato onion paste and our chole masala and garam masala a bit . It’s almost ready cook it for 6/7 minutes lastly take a small kadai for tadka. 8. On high flame Add butter, whole chilli (maybe 2) and add this tadka into your chole and its ready .
